Baked Stuffed Italian Pork Chops

Ingredients

  • 4x bone in or boneless 1 inch thick pork chops
  • 8x slices of prosciutto
  • 4x 1/2 inch thick slices of Italian Torta
  • 8x large basil or spinach leaves
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to to 350 degrees F
  2. Cut a deep pocket in the middle of pork chops being careful to not cut all the way through.
  3. Carefully stuff the Torta slice into the pocket. Add the 2 leaves of your choice to enclose the exposed end of the torta. This will help keep the cheese from melting out.
  4. Brush both sides of chop with the olive oil  and season with the salt and pepper.
  5. Wrap 1-2 pieces of prosciutto around entire chop covering the entire slit.  Secure the prosciutto and slit with a toothpick.
  6. Oil a baking pan and put the pork chops in.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Uncover and cook an extra 10 minutes until temperature reaches at least 145 degrees F.
