Salmon with Spring Herb Pesto

Ingredients

  • 4 Salmon Filets 2 inches thick
  • 4 TB undiluted pesto
  • 1/2 fresh lemon
  • Salt and Pepper 
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 400 degrees F 
  2. Oil a baking sheet
  3. Place salmon skin side down on prepared baking tray and pat dry with a paper towel
  4. Salt and pepper each filet
  5. Spread desired amount of pesto on top of each portion usually between 1-2 TB 
  6. Squeeze the lemon over each filet and
    drizzle a small amount of the olive oil over
  7. Bake for 12-15 minutes depending on desired internal temperature.  

Is also delicious with our basil pesto.
