Tortellini Skewers with Basil pesto

Ingredients

  • Fresh or frozen tortellini 
  • Small fresh mozzarella balls
  • 4 inch wooden skewers 
  • Caruso’s basil pesto
  • Olive oil 
  • Fresh basil leaves

Instructions

  1. Prepare tortellini per package instructions
  2. Drain and cool under running cold water
  3. Thread a tortellini, then a mozzarella ball and then another tortellini. 
  4. Use equal amounts of pesto and olive oil and stir until smooth. 
  5. Lay the prepared skewers on a decorative tray and drizzle the pesto over them.

Garnish with chopped basil leaves. 
Add some extra pesto in a bowl for dipping if desired.
